The Grand Canyon can get cold in the winter time, as there is such an expanse of space that heat does not get trapped like in other areas. There is a window from November until about January that will give you almost perfect temperatures, however, where you will still get to see the lush plant and animal life without it being covered in snow and you still will have reduced crowd sizes.
